Happy Independence Day! Cupcakes, anyone?

Four score and seven years ago -- err -- I mean, a long, long time ago, in a galaxy not so far away -- some fabulous, tights-wearing men in white wigs (not to be confused with Whigs, mind you) signed a piece of parchment!


They said... Alas! Finally, we are free from crumpets and tea.  Or is it scones they eat over there in Britain?  

Moving on.  


In all seriousness, though, 'tis a special day, indeed.

When it came to just how to celebrate this fine day, I figure we ought to look to our founding fathers. John Adams, though not my favorite founding father (much love, James Madison, you da man), did happen to answer this very question in a letter to his wife...


"It ought to be solemnized with pomp and parade, with shows, games, sports, guns, bells, bonfires, and illuminations cupcakes."**


The moral of the story? I MADE CUPCAKES!  You're darn welcome, John Adams!  



What Did I Use? (Cupcakes)
  • 1 box of Sugar Free Yellow Cake Mix
  • 1 can of La Croix

What Did I Use? (White-topped Cupcakes)
  • 1 box of White Chocolate Mousse 
  • 1 cup of Skim milk
  • Strawberries
  • Blueberries

What Did I Use? (ReddishPinkishButMostlyPink-topped Cupcakes)
  • Meringue powder
  • 1/4 cup warm water
  • Red Icing Dye (SERIOUSLY, it said RED!)
  • Blueberries


What Did I Do?
  1. I made cupcakes.  Using an electric mixer, beat cake mix and 1 can of La Croix.  Spoon into lined cupcake pan and follow cooking directions on the box.
  2. I made white frosting.  Using White Chocolate Mousse, I mixed the kit ingredients with 1 cup of skim milk, then beat on high for 5 minutes and let cool in the fridge for 2 hours.  Using a piping bag, I piped the frosting onto as many cupcakes as I could (eventually, I ran out).  
  3. I made "red" frosting.  Using meringue powder, I mixed the powder with warm water (follow proportion directions on your meringue powder kit/box).  Then, using a toothpick (okay, more like 8), I added red icing dye to the mix.  I was aiming for something a bit more red, but got really tired of the monotonous task of slowly adding dye -- and also didn't want to stain everyone's teeth red (though that's always a fun time until people notice).  Using a piping bag, I piped the "red" frosting onto the rest of the cupcakes.

  4. I put berries on top!
