Recipe | Grapefruit Brulee

A month or so ago, I came across a recipe for Grapefruit Brulee with Yogurt and Blueberry Sauce over at Ambitious Kitchen. Not only did it look delicious, but it also incorporated grapefruit, which is a fruit I often crave but haven't got creative with yet.

One morning, I was determined to get creative with grapefruit... but didn't have the ingredients necessary for the recipe I'd seen.

Thus began my typical method for cooking. It goes kind of like this...

"I don't have that thing the recipe says I need... what other crap do I have lying around that I can use instead?"

And that's where the fun starts. That's how I end up with 60 calorie sparkling water cupcakes, 100 calorie cake balls, and Skinny Monkey (the Chunky Monkey Substitute).

Ingredients (for 4 servings):
  • 1 grapefruit
  • 2 clementines
  • ½ cup Blueberries
  • 1/4 cup Balsamic Vinegar
  • 1 cup water
  • 3 tabespoons brown sugar
  • Whipped Cream

Directions:
  1. Cut grapefruit in half. Then, cut each of those halves in half again. You should end up with 4 pieces.
  2. Cut slices in the grapefruit to allow the juices to seep in while cooking.
  3. Peel clementines and separate its innards.
  4. Place grapefruit quarters in a casserole dish. Add clementines. Pour balsamic vinegar overtop and then sprinkle 1 tablespoon of brown sugar on top as well.
  5. Place in the oven on Broil for 5 minutes or until the brown sugar begins to burn.
  6. Meanwhile, heat water and blueberries over high heat. Add remaining 2 tablespoons of brown sugar and stir well, mashing blueberries as you stir.
  7. Bring to a boil, then reduce heat and simmer.
  8. Once you have removed the dish from the oven, pour blueberry sauce over top. Add whipped cream and sprinkle brown sugar, if desired.
