You know I think Breakfast is the meal of the champions... right? Well, I'd gotten into a bit of a rut with it. I suppose I just wasn't much of a champion for a while, there. I mean, I was eating breakfast, but... I'd sacrificed flavor and excitement in favor of protein and numbers. I began having two hard boiled egg whites and two pieces of toast with fiber jelly. Healthy? Absolutely. Delicious? Not so much...
And then I stumbled across Tone It Up's Protein Pancakes. I've seen a few recipes for what is supposedly the same pancake... and ended up deciding to try the version they created for St. Patty's Day... minus the spinach, of course (which wouldn't change the flavor but sure does make your pancakes green!).
Why is this special? It has 31.5 grams of protein (that is pretty insane) and only 17 carbs. Talk about a great ratio of carbs to protein, my friends. If you're already on some kind of workout plan, these pancakes will take it to the next level and get you sleek and toned for summer! Take a bite!
The Tone It Up recipe calls for brown rice protein powder... well, not only do I not own that, but I'm also too lazy to run to the store and spend money when I have perfectly good food in sight. So I turned to my trusty old Double Rich Chocolate Protein (get it here for almost half off)... Justin and I picked up a FIVE pound jug of it a few weeks ago and it is just begging to be used.
The recipe also called for blending all ingredients in a blender to make it smooth... but, until I read that step, I'd been envisioning small, golden, delicious pieces of mashed bananas showing up in my pancakes... and I wasn't willing to give that up! So I opted to just mash the banana and mix with the other ingredients.
Protein Chocolate Banana Pancakes

Ingredients:
- 1/2 tbsp Stevia (Truvia)
- 1/2 Banana, mashed
- 3 egg Whites
- 1/2 tbsp Almond Milk (or skim milk)
- 1 scoop Chocolate Protein Powder
- Optional: 1/2 tbsp Flax Meal
Directions:
- Mash banana
- Add remaining ingredients and mix well
- Pour pancake batter 3-4 inches wide (It's best to make these pancakes on the smaller side). Cook until each side is slightly brown.
- Garnish with strawberries and blueberries and optional small amount of honey
While you're sitting around today, here's my "song of the day" (which is funny because I don't do that...). A great reminded that all of these beautiful things (food, music, sunrises, sunsets, the color of your partner's eyes) are made beautiful by the ultimate creator... God! :)
