Recipe | Brown Walnut Tapioca in Brown Sugar and Vanilla

I have some vague memories of Tapioca Pudding. I don't know when they're from or where I ate it, but I have this memory of absolutely loving it. And, ever since then, I've felt something deep inside pulling me back. Oh, the drama.

So, when I saw it at the local grocery store, I swear, it literally jumped off of the shelf and into my hands. I took this as a sign that our relationship was meant to be. Since then, our love has blossomed.

That's not to say that we haven't had our share of problems, though...



You see, I had this grand plan to make Tapioca pudding on a Friday afternevening (afternoon + evening). There it sat, on the stove, just dying for me to love it... but then I got distracted and walked into the other room to make some music with Justin.

Tapioca pudding didn't like that. It wanted a whole lot more attention. Cue background music "'Cause I want it all! Or nothing at all!" etc etc (Yes, the drama).

Well, it boiled over. There was a smidge of a mess. But life moved on.

When I went to serve the good fellow, the darn Tapioca had hardened due to my lack of love. It was... less like pudding and more like... I don't know, Tofu? So I put it in a dish, poured some milk and brown sugar over it, and stuck it in the oven. This was the result...




Ingredients:
…for Tapioca Pudding:
  • 3 tablespoons Granulated Tapioca (I used instant)
  • 1/3 cup Sugar
  • 2 1/2 cups Milk
  • 1 beaten egg
  • 1 teaspoon vanilla extract
…for final dish:
  • 1 cup Skim Milk
  • 1 tablespoon Brown Sugar
  • 1 tablespoon chopped Walnuts
  • Vanilla Ice Cream
  • Whipped Cream (to taste)
Directions:
  1. Combine tapioca, milk, sugar and egg in a saucepan over medium-high heat, stirring occasionally. Once mixture comes to a boil, remove from heat and stir in vanilla, then let cool for 20 minutes.
  2. Preheat oven to 350.
  3. Place approximately 1 cup Tapioca in a medium size oven-safe bowl.
  4. Pour 1 cup milk on top and drizzle brown sugar over top.
  5. Bake in oven for 15 minutes.
  6. Remove from oven and use a large serving spoon or soup spoon to transfer appx ½ cup tapioca into an individual dish. Spoon some milk on top.
  7. Add 1 scoop vanilla ice cream and whipped cream to taste. Sprinkle walnuts on top and consume with absolutely blissful passion.

    Just stumbled upon your lovely blog for the first time -- it took about two seconds (probably less if you took out the mouse clicking time) for me to fall in love, pin it to read later, and gawk all the pretty pictures and food and amazingness with my mouth agape in happy awe.
    so anyway, keep it up! :) don't be surprised if I pop up every now and again...

    ...or maybe obsessively on the hour...

    ...but I'd never admit to that because that's probably borderline insanity and kinda creepy.
