Beet Infused Vodka Cocktail

[FYI: If you follow me on Instagram, you knew an infusion recipe was coming. JOIN THE FUN AND FOLLOW ME NOW BY CLICKING HERE, k thanks!]

Guys. Beets are the most beautiful ingredient. Ever. Don't believe me? Here...

No artificial coloring in that delicious drink. Just sweet, earthy, beet goodness.

We got the beet, we got the beet, we got the beet. Yeah, we got it.

When Prairie Organic Spirits contacted me to have me develop some vodka infusions, I quickly started brainstorming. What I wanted to create was something that was both unique in its infusion ingredient choice, and colorful and beautiful to photograph, look at, and drink. It didn't take me long to decide on roasted beets as a top contender.

A lot of people are on the fence about beets, but if you try them roasted, when they are sweet and earthy, you will not be disappointed. In a cocktail, they are wonderful. It's so much more than your typical fruit flavored vodka, because beets - especially roasted beets - have so much more to their flavor profile.

Sweet? Check.
Smoky? Check.
Earthy? Check.
Fresh? Check.

Now, find me a fruit that can check those boxes!

Beet Infused Vodka

Ingredients for Vodka:

  • 8 oz Prairie Organic Spirits Vodka
  • 1 large beet
  • Glass jar

Directions for Vodka:

  1. Trim and scrub the beet, removing the outer layer of skin. Wrap in aluminum foil and roast in an oven for 50 minutes.
  2. Let it cool, then cut into 4 pieces and combine with vodka in a glass jar.
  3. Cover and keep in a cool, dark place for 3 days, shaking 3-4 times per day (or as many times as you remember - it can't hurt!).
  4. Strain with cheesecloth or a regular strainer and make yourself a cocktail!

Ingredients for Cocktail:

  • Ice
  • 1.5-2 oz beet infused vodka
  • Juice from 1/2 lime
  • 3-6 oz soda water
  • 3 drops liquid stevia (or 1/2 tsp agave nectar)
  • 1 dash angostura bitters

Directions for Cocktail:

  1. Fill a shaker with ice, then top with remaining ingredients. Put the top on and slowly turn upside down a few times to mix (do not shake it if you have used soda water, you will end up with a mess!)
  2. Pour into a glass and garnish with a lime wedge

Strong and Skinny Strawberry Daiquiris

Never settle for pre-made daiquiri mix again. The natural sweetness of strawberries makes this delicious island cocktail sugary and sweet, (almost) hiding the fact that it has enough alcohol in it to knock you on your feet and take you for a ride! Have fun at the beach!

I should begin this post by apologizing to Justin's family for accidentally getting everyone drunk over Memorial Day weekend...

It was meant to be. Everyone had their sweet tooth set on strawberry daiquiris. At one time or another,  at least four of us had individual epiphanies that centered around the utter importance of sipping strawberry-flavored cocktails on an early summer day. 4 cups of Bacardi later (that would be two batches), the party had more than begun.

While I began with an apology, I should end with... yes, "You're Welcome," I did manage to get you all drunk.

Strong and Skinny Strawberry Daiquiris

Prep Time: 5 minutes
Servings per Recipe: 8
Ingredients:
  • 1 cup Strawberries
  • 1 cup Triple Sec
  • 2 cups Bacardi
  • 2 cups ice
  • 2 tbsp Sugar (or Stevia
  • Optional: 1 cup Oranges, peeled
  • Optional: Sugar for garnishing rims

Directions:
  1. Combine all ingredients in a powerful blender and blend.
  2. To sugar-rim glasses, pour sugar into a shallow bowl that is wide enough to put the rim of the cup in. Use a lime or orange to wet the rim, then tip upside down and rub in the sugar. After adding sugar to the rim, pour daiquiris into cups and serve!

My College Mock Trial Team (Shout out?) was always obsessed with the movie The Big Lebowski, in which the main character's drink of choice was a White Russian.

Sidenote: Any Big Lebowski fans out there? What's your favorite quote?

I recently re-discovered White Russians over the holidays. Guess what? They're delicious. Delicious, actually. Delicious with a capital D.

And I do believe that said deliciousness comes from the most delicious ingredient (of course!): Kahlua.

And so, because my life seems to revolve around finding weird things to put in cupcakes, I decided to use Kahlua.

'Twas a good choice. As was the decision to use Peanut Butter Frosting.

Want the recipe? Thought you might :)

Recipe | Frangelico Nutella Cupcakes

What's so awesome about liquor-infused desserts? I remember, as a kid, being told that the delicious truffles on the Christmas buffet table at a family party were "Rum balls."  WHAT?! There's ALCOHOL in there? I couldn't taste it. Alcohol was gross, right? So how were the desserts so good?!

This year, my ex-babysitter-turned-friend, Marianne, dropped by our house on Christmas and brought with her a bottle of Frangelico for my parents. The syrupy, hazelnutty flavor of Frangelico is not just good in coffee (though it is, truly, quite good in coffee...). It's also delicious in... you guessed it... desserts!

So into a cupcake it went! But what kind of frosting would "deliver" on a Frangelico cupcake? Hmm. Hazelnut goes with... hazelnut? Nut...ella? Nutella? Nutella? Eh? Eh? Eh? Ah, yes. After adapting my peanut butter frosting recipe for use on these Nutella Cookie Dough cupcakes, I was confident in its ability to "deliver."
