An Impromptu Invitation Stuffing Party

Last week, we had an impromptu invitation stuffing party. The invites I designed were finally back from our printer, and we were on a bit of a time crunch to get the invites out.


My mom and aunt came over on Thursday after work, and we got to business. We tried to do it assembly line style, where we each had a specific job to do in the process.


My mom, the kindergarten teacher, has wonderful handwriting. So, we played to her strengths and put her on address duty.


Hazel obviously had an important part to play, too. Laying around, looking cute, and rolling over at your feet isn't as easy as it looks.



Of course, when you're forcing your family to do slave labor hard work, you have to feed them. We ordered a few rolls of sushi, pot stickers, and edamame from a local sushi spot and had it delivered. Veggie straws also made an appearance.


Another must for invite stuffing party? Alcohol. It's only fair to serve alcohol when you're bonding over how long it's taking to stuff the invites (or how bad of an idea it was to tie twine on EVERY invitation). My aunt and I had sparkling peach wine, and my mom had some Skinnygirl Sangria.

Now, I'm guessing you're waiting for me to post a picture of the invite now! Not happening. Late next week, though, you're in for a treat!

Healthy Holiday Stuffing

Here come the holidays. Are you ready for the stuffing? Well, hate to burst your bubble and all, but typical homemade or dry box stuffing is anywhere between 400 and 700 calories per cup. And how much were you planning to eat? Yeah, your diet is history...

But wait! Don't cry. I know you love stuffing. That's why this recipe uses low-calorie bread and low-sodium chicken broth, avoiding the calorie overload! Yaaayyyyyyy! The crowd goes wildddd.

Prep time: 10
Cook time: 35
Yield: 6-8 servings
Calories per serving: ~150 Calories
Ingredients:
  • 2/3 pound Bread (Sara Lee 45 Calories and Delicious)
  • 1 whole Onion
  • 3 sticks Celery
  • 1 tablespoon Olive oil
  • 1 1/2 cups Chicken broth (low sodium)
  • 2 tablespoons Sage
  • 1 tablespoon Thyme
  • 1/2 tablespoon Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Cracked black pepper
Cooking Directions:
  1. Preheat oven to 325.
  2. Cut bread into small cubes.
  3. Place on a cookie sheet and bake for 15 minutes, rotating/tossing half way through.
  4. Remove from oven and set aside.
  5. Dice onion and celery.
  6. In a pan, combine onion and celery with olive oil, Thyme, Parlsey, Salt, and black pepper. Add 1/2 cup of chicken broth and cook on medium heat for 20 minutes, stirring occasionally.
  7. In a large bowl, combine with bread. Add 1 cup chicken broth and mix well. Add additional broth if it's too dry.
  8. Serve!
