Coconut Paleo Protein Pancakes

I was still sleeping at 8am when my husband walked into the room and said, "I'm going to the store for milk. Do you want anything?"

And I did. I sure as hell did. I must have been nose deep in some culinary dreams, because I sprang out of bed with visions of paleo pancakes swimming through my head. I had almost everything, you see, but a few things would make it perfect.

You know, the good things. Like dark chocolate and maple syrup.

And so off I went, makeup-less and crazy haired, glasses smooshed to my face, because I was AWAKE now that pancakes were in the mix.

They did not disappoint.



Coconut Paleo Protein Pancakes
Ingredients:
1/4 cup Coconut Flour
1/4 cup + 1 tbsp Coconut Milk
2 eggs
2 egg whites
1 tbsp flax seed
1/2 scoop protein powder (appx 1.5 tbsp)

Directions:
  1. Combine all ingredients in a blender and mix until well combined.
  2. Grease a cooking pan with coconut oil.
  3. Pour in a bit at a time and cook uncovered over medium-high heat. *If you are adding blueberries or fruit, add it now, after you've poured the batter* 
  4. Once you see bubbles appear, carefully flip with a small spatula. The top will be a bit liquidy still as you flip, so do it decisively! It's alright if a bit of it spills- just use the spatula to move your pancake around and pick it up!
  5. If you are adding chocolate or something else that is melty, add it on top now!
  6. After another two minutes, check the bottom of the pancake. When it reaches your desired darkness, serve.
  7. TOP THAT SCHTUFF WITH MAPLE SYRUP, OBVIOUSLY.

Clara's Mint Juleps

Warning: These are so good, you might drink half your drink before taking a picture. 


My cousin is the cocktail queen. 

When we got together a few weeks ago on Derby Day, I charged her with making Mint Juleps. It doesn't matter if this girl has made a drink before or not, she will figure it out and make it amazing.

Repeat after me: All hail the queen.

And, as I mentioned in my post about that weekend, she came through with flying colors. Since then, a few readers have asked me for the recipe.

I recently found a large amount of fresh mint growing in my new backyard (thanks, previous owners!), so there is really no excuse to not throw together a mint julep on a hot afternoon. Thanks, Clara!

Clara's Mint Juleps

Ingredients:

  • 5 medium sized mint leaves
  • 1 tablespoon sugar in the raw of sugar substitute, or 3 drops of liquid stevia
  • Squeeze of lime
  • Ice
  • Splash seltzer water

Directions:

  1. In an empty glass of choice (I put mine in the freezer for a few hours to make it frosty), muddle 5 medium sized mint leaves with 1 teaspoon of sugar in the raw, sugar substitute, or 3 drops of liquid stevia, and a squeeze of lime. 
  2. Add ice.
  3. Pour 1-2 shots of bourbon over ice.
  4. Pour into a shaker and shake, then pour all ingredients back into glass and top with seltzer water.

Bruleed Bananas and Dates in Chobani

I used to focus so heavily on recipe posting that my recipe list would grow by 2 or 3 each week. Now? As I focus a bit more on real life, the recipes have been few and far between.

#Oops. I guess this blog is as versatile and changing as real life. #SorryImNotSorry

That said, sometimes I make something that is just so delicious, it pretty much comes out of the oven screaming "SHARE ME ON THE BLOG!" Like a mandrake root kind of scream (Harry Potter for the win). A girl has to oblige.


This recipe is an awesome breakfast, mid-day snack, or even dessert. Don't hesitate to swap out ingredients, like using a different greek yogurt (or regular yogurt, if you must). If you want it a bit sweeter, feel free to use vanilla instead of plain yogurt.

Bruleed Bananas and Dates in Chobani

Ingredients:


  • 1 Banana
  • 1 tbsp Sugar, for sprinkling
  • 3 Dates
  • 2 tbsp Organic Shredded Coconut, No sugar added
  • 1 tbsp Sliced Almonds (Walnuts, Pistachios or Pralines would be delicious here, too)
  • 1/2 cup Plain Greek Yogurt
  • Parchment paper

Directions:


  1. Slice banana into 1/2-1/4 inch pieces. Place on parchment paper lined cookie sheet and sprinkle sugar on top of banana pieces. Broil for a few minutes, until the sugar has browned. Set aside.
  2. Chop dates.
  3. Scoop yogurt into a bowl or cup. Add banana slices, then sprinkle with dates, shredded coconut, and almonds.
  4. Enjoy the heck out of that bowl of delicious goodness.

Cotton Candy Rainbow Cake

The cake is decadent and moist, yet surprisingly light feeling. The fluffy frosting, to put it in Justin's words, tasted like "the frosting equivalent of cotton candy." And you know what else? It melts in your mouth. Seriously. It's magic!



My brother is a huge dork. Like seriously. So, when he turned 18 this month, I knew one thing for sure: I couldn't make him a regular birthday cake. It had to be special.

Special means different things to different people, doesn't it? For some people, a special cake means an amazingly decadent oreo ice cream cake. For my dad, a Coca Cola fan for life, a special cake means a German Chocolate Coca Cola Cake with Cream Cheese Icing and Gingersnaps. For my brother... well, he's a special kid -- the kind of special kid that dresses up like Ron Burgundy from Anchorman for a choir concert. He's crazy and full of energy and color. He might just be a little insane (we are, after all, related).

So, what kind of cake do you make Ron Burgandy-loving, loud-mouthed, stranger-mooning kid? Well, I originally called this a crack cake. No, there's no crack in it. But it's addicting nonetheless... and when you present it to friends, they'll think you've finally cracked...

...that is, until they taste it. Despite having no added sugar, this cake tastes like pure, sugary heaven.





Cotton Candy Rainbow Cake

Calories: 124
Prep Time: 10 minutes
Cook Time: 22-26 minutes
Servings: 12

Ingredients (For the Cake):
  • 1 box Sugar-Free Yellow Cake
  • 12 Ounces Sparkling Water (Perrier, La Croix, etc all work)
  • Food Coloring: I used Blue and Purple gel food coloring (by Wilton) for the cake 
Ingredients (For the Frosting):
  • 1 cup Truvia (or you can substitute sugar or splenda)
  • 1/3 cup Water
  • 1/4 teaspoon Cream of Tartar
  • 2 Egg Whites
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract
  • Food Coloring: I used Pink gel food coloring (by Wilton) for the icing.
  • Sprinkles: I used anything colorful I could find. There are even Spongebob-themed sprinkles on there. Thanks, Mom.

Directions:
  1. Preheat the oven to 350 and pre-grease two small (I used 12") round cake pans.
  2. Mix. Combine cake mix and sparkling water in a mixing bowl and mix well.
  3. Color and pour. (Optional) To color, dip a table knife into blue gel food coloring, then mix the color into the cake batter. Once well mixed, pour half of the batter into one of the cake pans. Next, dip a fresh knife into purple gel food coloring, then mix the color into the remaining cake batter. Once well mixed, pour the rest of the batter into a new cake pan. Note: If you won't be coloring the batter, simply divide it between each cake pan and skip any of the coloring-related comments!
  4. Bake for 22-26 minutes, or until a fork or toothpick comes out clean. Set aside to cool. Be sure to let the cake completely cool before removing from the pans!
  5. Prepare the frosting. In a small pot, combine water, sugar, and cream of tartar and heat on medium-high heat, stirring occasionally until the sugar is dissolved and small bubbles begin to form. While you're heating that mixture, whip egg whites and vanilla and almond extracts until soft peaks begin to form. Add the sugar and water mixture gradually, while mixing, until stiff peaks form. This should take about 8-10 minutes. Finally, use a table knife to dip into pink gel food coloring, then mix the color into the frosting.
  6. Finishing touches. Flip one of the round cake pans over on a serving platter, holding your hand underneath the cake to help gently lower it down onto the platter. Cover this with a layer of pink frosting. The frosting is fairly frothy/messy, so, especially if you're going for the crazy look of the cake I made, feel free to slap it on and make a mess! Next, slowly remove the second cake from its pan, then flip it on top of the first piece, so that the smooth, round top of the cake faces up. Cover this in the rest of the frosting, then add sprinkles to taste!
