Easy Green Juice

Pin It Print Friendly and PDF

This week, I needed some vitamins and a little detox. I've been having some weird muscle inflammation around my jaw, so I am hoping some good old fashioned nutrients will solve the problem.

Fingers crossed.

Juicing has become one of my favorite rituals when I can tell my body is in need of some nutrients. It's definitely a process - rinse and wash the vegetables, put them through the juicer, can the juice, and wash the juicer (ugh. my least favorite part of anything ever).

If you don't have a juicer, don't fret. You can make this in a high powered blender. Blend all of the ingredients together, using a tamper to push things down. Add a bit of water if you need to, but it will slightly dilute the flavor. Once you're done, either drink it as a smoothie (if you're doing it this way, be sure to remove the apple cores) or filter through cheesecloth or a fine mesh strainer.

Easy Green Juice
Servings: 2
Ingredients:

  • 1 cucumber
  • 2 green apples
  • 2 handfulls kale
  • juice from 1 lemon
  • 1 head romaine
  • 1 tbsp ginger
Directions:
  1. Rinse and juice all ingredients. If you are using a blender, blend well and then strain pulp.

Guacamole Night with Piedra Azul Tequila

Pin It Print Friendly and PDF

A few weeks ago, I was contacted and offered a very difficult proposition to participate in a Dip and Sip Challenge. Basically, I had to make cocktails with Piedra Azul Tequila and compete in a guacamole challenge judged by Gaby Dalkin (Blogger at What's Gaby Cooking and Author of Absolutely Avocados). Did I say difficult? I meant delicious.

I promptly got on it and set up a Mexican night with some friends of ours. I brought the tequila (which was provided by Piedra Azul) and cocktail ingredients, some guacamole ingredients (courtesy of a Whole Foods gift card provided by What's Gaby Cooking), and my good old happy spirit. My girlfriend prepared a taco bar, quesadillas, and some taquitos.

When we arrived, the first order of business was cocktail making. My only guideline was to use the Piedra Azul Tequila we were provided, so I had carte blanche with other ingredients. Looking for something light and refreshing, I decided to create cucumber margaritas.

Before arriving, I juiced a few cucumbers to make sure we had the nutrients to combat the alcohol. I ended up with a huge bottle of cucumber juice. Keep in mind that you can easily use any pure juice in this recipe - so if you'd prefer Pomegranate Margaritas, just use Pomegranate juice instead of Cucumber. You get the idea.

I topped these margaritas with cilantro, and it was the perfect addition. But, I know some of you are not into cilantro (what's with the hate?), so feel free to omit!

Cucumber Margarita
Ingredients:
  • 1.5 ounces tequila
  • 3 ounces cucumber juice
  • 3 ounces water
  • 1 tsp Maple Syrup or Agave
  • 1/2 lime
  • Ice
  • A few pieces of cilantro, ripped, for garnish
Directions:
  1. Squeeze lime juice into shaker.
  2. Use lime wedges to wet the edges of the glass. Dip in ice, if preferred (we didn't!).
  3. Combine all remaining liquid ingredients in a shaker and shake.
  4. Pour over ice.

Once the cocktails were made, we got down to the next order of business: Guaca-freaking-mole. It is one of my favorite things because I feel like you can do just about anything with it and justify it as "healthy" because avocados are all the rage in the health world.

I'm a bit disappointed with how these photos turned out, but I assure you that the guac was delicious. I always try to use feta or goat cheese, and combine it with garlic, so it tasted very rich.

Garlic Guacamole
Ingredients:
  • 3 avocados
  • 1/4 white onion, chopped
  • 1 handful cilantro, chopped
  • 1/2 lime, juiced
  • 1 tbsp minced garlic
  • 3 tbsp hot, smoky salsa (or whatever works for you!)
  • 1/3 cup Feta
Directions:
  1. Mash avocados.
  2. Add remaining ingredients and mix well

Once the cocktails were flowing and the guacamole was prepared, we dug into the taquitos and taco bar. My girlfriend makes a mean taco bar spread, and there was anything you could want in your taco! From shredded chicken to corn, from beans to carmelized onions, she had it all.

We may have been full, but we weren't ready to quit without using the quesadilla maker. My girlfriend made a few chicken and cheese quesadillas, and the men gobbled them down.

What About You?

  • What's your secret Guacamole recipe?
  • Have you ever gotten fancy with margaritas, or are you into the traditional recipe?

**Disclaimer: I was provided with a Whole Foods gift card and a bottle of tequila to write this post. Don't worry, though - it was all just as good as it looks!**

Effen Cucumber Mint Martini

Pin It Print Friendly and PDF

Let's start today's post with a game. Humor me for a minute as you read a few sentences and try to determine what they've all got in common...

-On a hot summer day, you sit on the edge of the water and let cool water flow over your legs.

-A dream vacation involves dancing and swimming under a waterfall, or hiding behind the water's spray with your significant other.

-You're sitting in a lounge chair, sipping a Corona with lime.

-You return from a long run and down a bottle of Smart Water.

Did you guess it yet? They're all refreshing!

There's something magical about the light, happy, refreshing feeling you get from all of those things. Whether it's something as large scale as a dream vacation, or something as simple as downing a bottle of water, it seems to breathe new life into us. There's nothing wrong with a little rejuvenation, my friends.

Just as I believe that life is better when you embrace spontaneity and random events and urges that come up, I also believe life is better when you continually find ways to revitalize yourself. Put cucumbers over your eyes and take a nap, or make cucumber and mint infused water to treat yourself as you re-hydrate.

Or, of course, make yourself a deliciously refreshing cocktail. Not the kind of cocktail that makes you pucker and cringe as you slowly sip it. Not the kind that's filled with sugar, just to create something that tastes good. Nope, this is a different kind of cocktail. Let's just say the cocktail has... evolved.

Enter the delicious and refreshing taste that we all want at the end of a tough day, or the beginning of an eventful evening.

Effen Cucumber Mint Martini

Ingredients:
  • Ice Cubes
  • 3 Mint leaves
  • 1 slice of Cucumber (1/4 inch thick), cut in half
  • 1 lime wedge
  • 1.5 oz Effen Cucumber Vodka
  • 6-8 oz Seltzer Water (Sparkling Water, Club Soda, or Diet Tonic will also work)

Directions:
  1. Add ice cubes to cup
  2. Add mint leaves and cucumber wedge. Squeeze lime juice from lime wedge and add.
  3. Add Effen Cucumber Vodka and Seltzer Water
  4. Stir!

Notes:
  • You may notice this is a martini recipe, yet it's not in a martini glass. What's up with that? Unfortunately, I'm far too clumsy to deserve to drink from a real martini glass (seriously, I even have to use stemless wine glasses, I'm just a huge spaz and I get all excited and knock stuff over). That said, feel free to act like a real grown up and use a real martini glass. :)

Cucumber Mint Infused Water (Detox)

Pin It Print Friendly and PDF

You know that song by the Beach Boys where they sing, "I'm picking up good vibrations?" Well, let's just say that, if you haven't, you should (find it here). Why am I making you listen to random Beach Boys songs? Well, because the lyrics should really be changed to...

I'm picking up good hydration!

Why? Because of this...

I'm officially the crazy lady singing about water. What else is new? Oh, actually, not that you ask, I'm in Minneapolis this week on a work trip. Which means I'm probably not - but really should - be staying hydrated.

This is a delicious recipe for cucumber mint infused water. It will encourage you to drink more by being so utterly delicious. Also, cucumber and mint are refreshing additions that make you feel alive!

Kind of like a... detox!

Summertime Quinoa Veggie Salad

Pin It Print Friendly and PDF
This dish is delightfully refreshing, hydrating, and delicious. Chopped tomatoes add moisture while cucumbers and carrots add a yummy crunch, all while playing along nicely with cilantro for a meal that tastes delicious on its own, without needing the butter and oil all the other dishes need.

It's healthy time, people! That's right, time to load up on your... protein, fiber, nutrients, blah blah blah. You get it, right? The good things. Let's get them into your tummy.

Today's recipe is actually not of my own creation. It was my lovely mother's idea. Kind of like my favorite salad (which I call the kitchen sink salad - you throw in everything that you have in your fridge that could possibly go into a salad - everything but the kitchen sink!), this recipe has a base of delicious, healthy Quinoa, and then includes tons and tons of chopped up veggies.

It's the perfect summer snack. Or the perfect summer side. Because it gives you the hydration and nutrition you need without being too much work or too many calories. Feel free to add nuts, such as pine nuts or sunflower seeds, or some cut up peppers to the mix!

Summertime Quinoa Veggie Salad

Ingredients:
  • 1 cup Quinoa
  • 2 cups Water
  • 1 tomato, chopped
  • 1 long carrot, chopped
  • 1/4 cucumber, chopped
  • 1 handful cilantro, chopped
  • 1/4 cup, black beans, cooked and drained
  • 1 Lemon, juiced
Directions:
  1. Cook Quinoa by combining Quinoa and water and heating until boiling, then reducing to a simmer and continuing to cook for 20 minutes. After 20 minutes, remove from heat and let sit for 5 minutes, then fluff.
  2. Add chopped ingredients and lemon juice and toss.
  3. Serve as a lunch snack or a side for your favorite dinner dish!
